Sugar Cookie Bars

I made these Sugar Cookie Bars for Charlie and his friends on Saturday night for the UFC pay-per-view fights.  They loved them and the frosting is by far the best frosting I've ever made, it was SO fluffy. 

Sugar Cookie Bars
1 cup butter, softened
2 cups sugar
4 eggs
2 teaspoons vanilla extract
5 cups flour
1 teaspoon salt
1/2 teaspoon baking soda

Preheat oven to 375 degrees. Grease a 13 x 18 inch sheet pan and line with parchment paper.

In a medium bowl, combine the flour, salt and baking soda and set aside. In the bowl of an electric mixture, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing after each. Add the vanilla. Add the flour mixture in 2 addition, mixing until just combined.

Press the cookie dough into a deep cookie sheet either greased or lined with parchment paper.  Spread evenly (I used a small rolling pin for this). Bake for 10-15 minutes until lightly golden and a toothpick inserted into the middle comes out clean. Cool completely.

Buttercream frosting

1/2 cup shortening
1/4 cup butter, softened
4 cups confectioners sugar
1 tablespoon vanilla extract
4 tablespoons milk

In the bowl of an electric mixer, cream together the shortening and butter until combined and smooth. Add vanilla, powdered sugar, and milk and mix slowly until all combined. I then turned the mixer on the highest setting and whipped it for approximately 3 minutes and it turned out so light and fluffy, it was amazing.  Feel free to add food coloring, a few drops is all it takes.

Spread onto cooled cookies. Slice into bars and serve.
